Recipe
Yield: 12–14 truffles
Prep Time: 20 minutes
Chill Time: 30 minutes
Cook Time: 10 minutes
Ingredients:
For the Truffles:
-
8 oz (225g) creamy goat cheese (log style), softened at room temperature
-
2 oz (55g) cream cheese, softened
-
⅓ cup (40g) dried cranberries, finely chopped
-
⅓ cup (45g) shelled pistachios, finely chopped (reserve 2 tbsp for rolling)
-
1 tsp orange zest (optional, but recommended)
-
Pinch of sea salt
For Coating & Serving:
-
Reserved chopped pistachios
-
¼ cup (30g) additional dried cranberries, very finely chopped
-
⅓ cup honey
-
½–1 tsp red pepper flakes or chili flakes (adjust to spice preference)
-
1 tbsp unsalted butter (optional, for richness)
-
Fresh thyme or rosemary sprigs, for garnish
-
Flaky sea salt (like Maldon), for finishing
Instructions:
1. Make the Truffle Mixture:
-
In a medium bowl, combine the softened goat cheese and cream cheese. Mix with a spatula or hand mixer until smooth and well blended.
-
Fold in the chopped cranberries, most of the pistachios (reserving some for rolling), orange zest (if using), and a pinch of salt.
-
Cover and refrigerate for 20–30 minutes, until firm enough to handle.
2. Form the Truffles:
-
On a small plate, mix the reserved chopped pistachios and the additional finely chopped cranberries.
-
Scoop the chilled cheese mixture (about 1 tablespoon per truffle) and roll into smooth balls using your hands.
-
Gently roll each ball in the pistachio-cranberry mixture, pressing lightly to adhere. Place on a parchment-lined plate or tray.
-
Chill again for 10–15 minutes if they’ve softened too much.
3. Make the Hot Honey:
-
In a small saucepan, combine honey and red pepper flakes over low heat. Warm gently for 5–7 minutes, stirring occasionally—do not boil. Let it infuse off the heat for 5 minutes.
-
For an extra luxurious finish, stir in 1 tablespoon of butter until melted and glossy.
4. To Serve Warm:
-
Oven Method: Preheat oven to 350°F (175°C). Place truffles on a parchment-lined baking sheet and warm for 5–7 minutes, just until slightly softened but not melting.
-
Air Fryer Method: Warm at 300°F (150°C) for 3–4 minutes.
-
Serving: Arrange warmed truffles on a serving plate. Drizzle generously with the hot honey. Garnish with fresh herbs and a sprinkle of flaky sea salt.
-
Presentation Idea: Serve on a platter with a small bowl of extra hot honey for dipping, and crackers or toasted baguette slices on the side.
Tips for Success:
-
Cheese Texture: Ensure goat cheese and cream cheese are truly softened for a smooth, lump-free mixture.
-
Make Ahead: Truffles can be formed and rolled in the nut mixture up to 2 days ahead. Keep covered in the fridge. Bring to room temperature for 15 minutes before warming.
-
Hot Honey Control: Start with ½ tsp of red pepper flakes—you can always add more heat. For a more complex spice, add a pinch of smoked paprika or a dash of apple cider vinegar to the honey.
-
No-Dairy Option: Use a high-quality, firm vegan goat-style cheese and vegan cream cheese.
-
Extra Crunch: Lightly toast the pistachios before chopping for a deeper, nuttier flavor.
Serving Suggestions:
-
As an appetizer with crisp crackers, apple slices, or pear wedges.
-
As a cheese course alongside figs, walnuts, and a bold red wine.
-
As a dessert with shortbread cookies and a glass of dessert wine or sparkling wine.
-
Unexpected Twist: Crumble over a warm spinach or arugula salad.
This dish is a beautiful balance of creamy, tangy, sweet, spicy, and crunchy—all in one elegant, warm bite. Perfect for holiday gatherings, dinner parties, or when you want to turn a simple cheese plate into a memorable experience.
