Korean-Style Grated Carrot Salad (Yangpa-Carrot Muchim)
This bright, slightly sweet, and tangy salad is a refreshing banchan (side dish) often found in Korean cuisine. It’s quick to make and pairs wonderfully with grilled meats, rice, or heavier mains.
Ingredients

3–4 medium carrots (about 300g), peeled and coarsely grated

¼ small onion or ½ shallot, very thinly sliced

1–2 green onions, thinly sliced

1 tbsp toasted sesame seeds
For the Dressing:

1½ tbsp rice vinegar (or apple cider vinegar)

1 tbsp soy sauce (or tamari for gluten-free)

1 tbsp honey or maple syrup

1 tsp toasted sesame oil

½ tsp fine sea salt (adjust to taste)

1 small garlic clove, minced (optional)

½ tsp grated fresh ginger (optional)

Pinch of gochugaru (Korean red pepper flakes) for mild heat (optional)
Instructions

Prepare vegetables: Grate carrots using the large holes of a box grater or food processor. Place in a medium bowl. Thinly slice the onion/shallot and green onions, and add to the carrots.

Make the dressing: In a small bowl, whisk together rice vinegar, soy sauce, honey, sesame oil, salt, and optional garlic, ginger, and gochugaru until well combined.

Combine: Pour the dressing over the grated carrot mixture. Toss thoroughly with tongs or clean hands to coat evenly.

Let it marinate: Allow the salad to sit at room temperature for 10–15 minutes. The salt and vinegar will soften the carrots slightly and allow flavors to meld.

Finish and serve: Just before serving, toss again and sprinkle with toasted sesame seeds.

For a quicker version: Skip the marinating time and serve immediately—it will still be delicious but with more crunch.

Add-ins: Thinly sliced cucumber, a little grated apple, or julienned daikon radish make nice additions.

Make it spicy: Add a drizzle of Korean gochujang (red chili paste) mixed with a little vinegar to the dressing.

Storage: Best eaten the same day, but can be refrigerated in an airtight container for up to 2 days (the texture will soften).
