Ingredients
For the Mushrooms:

1 lb (450g) button or cremini mushrooms, cleaned, stems trimmed

2 tbsp cornstarch or all-purpose flour

2 tbsp neutral oil (like avocado, vegetable, or canola)

¼ tsp black pepper

½ tsp smoked paprika (optional, for depth)
For the Garlic Sauce:

3 tbsp unsalted butter

5–6 garlic cloves, finely minced

2 tbsp low-sodium soy sauce (or tamari for gluten-free)

1 tbsp fresh lemon juice

1 tsp honey or maple syrup

½ tsp red pepper flakes (optional)

2 tbsp chopped fresh parsley or cilantro
Instructions

Prep Mushrooms:
Pat mushrooms very dry with paper towels. Toss in a bowl with cornstarch, salt, pepper, and smoked paprika until evenly coated. -
Pan-Fry:
Heat oil in a large non-stick or cast-iron skillet over medium-high heat. Add mushrooms in a single layer (cook in batches if needed). Cook undisturbed for 3–4 minutes until golden on one side. Flip and cook 3–4 minutes more until crispy all over. Transfer to a plate. -
Make the Garlic Sauce:
In the same skillet, reduce heat to medium-low. Melt butter and add garlic. Sauté for 30–60 seconds until fragrant (don’t let it burn). Stir in soy sauce, lemon juice, honey, and red pepper flakes. Simmer for 1 minute. -
Toss & Serve:
Return mushrooms to the skillet and toss to coat in the sauce for 1–2 minutes. Turn off heat, stir in fresh herbs, and serve immediately.
