Ingredients
For the Saltine Cracker Crust:
- 1 ½ sleeves (about 55-60) saltine crackers (6 oz / 170g)
- ½ cup (1 stick / 113g) unsalted butter, melted
- 3 tbsp granulated sugar
For the Citrus Filling:
- 1 (14 oz) can sweetened condensed milk
- 4 large egg yolks (save the whites for another use)
- ½ cup freshly squeezed citrus juice (The classic is a 50/50 mix of lemon and lime juice. For a tamer pie, use ⅔ lemon, ⅓ lime. Key lime juice also works.)
For the Topping:
- 1 ½ cups heavy cream, chilled
- 2-3 tbsp powdered sugar
- Coarse sea salt or flake salt for garnish (essential!)
Instructions
1. Make the Crust:
- Preheat oven to 350°F (175°C).
- Crush the saltines finely (use a food processor, rolling pin, or your hands). You should have about 1 ½ to 2 cups of crumbs.
- In a bowl, mix the cracker crumbs, melted butter, and sugar until combined. It will feel like wet sand.
- Press the mixture firmly and evenly into a 9-inch pie plate, going all the way up the sides. The crust should be compact.

2. Make the Filling:
- In a medium bowl, whisk the egg yolks until smooth. Whisk in the sweetened condensed milk until fully combined.
- Gradually whisk in the citrus juice until the mixture is smooth and slightly thickened.
- Pour the filling into the warm crust.
3. Bake & Chill:
- Bake the pie for 15-18 minutes, just until the filling is set (the center should have a slight jiggle, like Jell-O).
- Crucial: Let the pie cool completely on a wire rack, then refrigerate for at least 4 hours, preferably overnight. The filling needs to set fully.
4. Top & Serve:
- Just before serving, whip the chilled heavy cream with powdered sugar until stiff peaks form.
- Pile the whipped cream generously over the chilled pie. Sprinkle with a light but noticeable pinch of coarse sea salt.
- Slice and serve cold.
