This recipe, inspired by famous versions (Toll House, Jacques Torres, Alton Brown), uses science and technique for a cookie with a crisp edge, a chewy center, and incredible flavor.

Ingredients
- 1 cup (2 sticks, 227g) unsalted butter
- 1 ¼ cups (250g) dark brown sugar, packed
- ½ cup (100g) granulated sugar
- 2 large eggs + 1 egg yolk, cold
- 1 tbsp pure vanilla extract
- 3 cups (375g) all-purpose flour (spooned & leveled)
- 1 ½ tsp cornstarch
- 1 tsp baking soda
- 1 tsp baking powder
- 1 ½ tsp fine sea salt
- 2 cups (340g) high-quality semi-sweet chocolate chips or chopped bars (I like 60-70% cacao)
- Flaky sea salt for finishing (optional, but iconic)
Instructions (The Method Matters!)
1. Brown the Butter (The Flavor Bomb):
- Melt butter in a saucepan over medium heat. Swirl until it foams, turns golden, and releases a nutty aroma. Immediately pour into a heatproof bowl to stop cooking. Let cool for 10-15 minutes (should be warm, not hot).
2. Mix Sugars & Wet Ingredients:
- In a large bowl, whisk the warm brown butter, dark brown sugar, and granulated sugar for 1 minute. It will look gritty.
- Add the eggs, egg yolk, and vanilla. Whisk vigorously for 1 full minute until the mixture becomes smooth, glossy, and slightly paler.
3. Combine Dry Ingredients:
- In a separate bowl, whisk the flour, cornstarch, baking soda, baking powder, and salt.
4. Bring It Together:
- Fold the dry ingredients into the wet with a spatula until just combined and no dry flour remains.
- Fold in the chocolate chips. The dough will be soft.
5. The NON-NEGOTIABLE REST (Chill):
- Cover the dough and refrigerate for at least 24 hours, up to 72 hours. This:
- Hydrates the flour for a better texture.
- Deepens flavor (like marinating).
- Prevents over-spreading.
6. Bake:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment.
- Scoop dough into large balls (about 3 tbsp each). Place 4-5 on a sheet, spacing widely.
- Bake for 12-14 minutes, until edges are set and golden but centers still look soft and puffy.
- The Tap: For ultra-gooey centers, tap the baking sheet firmly on the counter the moment they come out of the oven. This deflates them slightly and creates those beautiful wrinkles.
7. Cool & Finish:
- Sprinkle immediately with flaky sea salt.
- Let cookies cool on the baking sheet for 10 full minutes—they continue to set. Then transfer to a wire rack.
