Cheesy Ranch Chicken Bombs

Ingredients
For the filling:

1 lb boneless, skinless chicken breast, cooked and shredded

8 oz cream cheese, softened

1 packet (1 oz) ranch seasoning mix

1 cup shredded cheddar cheese

½ cup shredded mozzarella cheese

2 tablespoons chopped green onions

2 tablespoons cooked and crumbled bacon (optional)
For assembly:

1 can (16 oz) refrigerated biscuit dough (8 biscuits)

4 tablespoons melted butter

½ cup grated Parmesan cheese

¼ cup panko breadcrumbs

1 teaspoon dried parsley

Ranch dressing for dipping

Prepare filling: In a medium bowl, combine shredded chicken, cream cheese, ranch seasoning, cheddar, mozzarella, green onions, and bacon (if using). Mix until well combined.

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

Prepare coating: In a shallow dish, mix Parmesan, panko, and dried parsley.

Assemble bombs: Separate biscuit dough and flatten each biscuit into a 4-inch circle. Place about ¼ cup of chicken mixture in the center of each biscuit. Gather edges and pinch to seal, forming a ball.
