Ingredients
For the Filling:

For the Steak:

1 lb (450g) thinly sliced ribeye or sirloin steak (ask butcher to slice it thin, or partially freeze and slice yourself)

Instructions
1. Prepare the Filling:
Heat oil in a skillet over medium heat. Add sliced onion, bell pepper, and mushrooms (if using). Sauté until soft and lightly caramelized, about 8–10 minutes. Season with black pepper and garlic powder. Remove from heat and let cool slightly.
2. Prep the Steak:
Lay steak slices flat on a cutting board. If pieces are small, you can slightly overlap them to create a larger “sheet.” Season lightly with smoked paprika, onion powder, salt, and pepper.
3. Assemble the Roll-Ups:
Place a slice of provolone cheese on each piece of steak. Top with a generous spoonful of the veggie filling. Add a few jalapeño slices if using. Roll up tightly and secure with a toothpick.
4. Cook the Roll-Ups:
In the same skillet, heat 1 tbsp oil and butter over medium-high heat. Once hot, add roll-ups seam-side down. Sear 2–3 minutes per side until golden brown and steak is cooked through. Work in batches if needed.
5. Rest and Serve:
Remove toothpicks, let rest 2–3 minutes, and serve warm.
