Ingredients
For the Apple Filling:
-
2 medium apples (Granny Smith or Honeycrisp), peeled & finely diced (about 2 cups)
-
2 tbsp unsalted butter
-
¼ cup (50g) light brown sugar, packed
-
1 tsp ground cinnamon
-
¼ tsp ground nutmeg
-
1 tbsp all-purpose flour (to thicken)
-
1 tsp vanilla extract
-
Pinch of salt
For Assembly:
-
1 (16.3 oz) can refrigerated jumbo flaky biscuits (8-count)
-
10–12 caramels, unwrapped (like Kraft)
-
1 tbsp milk or cream (for sealing)
For Coating & Glaze:
-
½ cup caramel sauce, plus more for drizzling
-
1 cup chopped pecans or walnuts, toasted (optional)
-
1 cup powdered sugar
-
2 tbsp milk or cream
-
½ tsp vanilla extract
Instructions
-
Make the Apple Filling:
In a skillet over medium heat, melt butter. Add diced apples, brown sugar, cinnamon, and nutmeg. Sauté 5–7 minutes until apples soften. Stir in flour and cook 1 more minute until thickened. Remove from heat, stir in vanilla and salt. Let cool completely. -
Prep Biscuits & Assembly Station:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment. Separate biscuits and flatten each into a 4-inch circle. Place a caramel in the center of each. Top with 1 tbsp cooled apple filling. -
Form the Bombs:
Brush edges of biscuit with milk. Gather edges over filling, pinching firmly to seal. Place seam-side down on baking sheet. -
Bake:
Bake 15–18 minutes until golden brown. Let cool 5 minutes on the sheet. -
Coat & Decorate:
-
Warm caramel sauce slightly for easy dipping.
-
Dip the top of each warm bomb in caramel, then roll in chopped nuts if using. Place back on parchment.
-
For the glaze, whisk powdered sugar, milk, and vanilla until smooth. Drizzle over bombs.
-
Finish with an extra drizzle of caramel sauce.
-
Tips for Success
-
Cool the Filling: Hot filling will melt the caramel prematurely and can cause leaks.
-
Seal Tight: Pinch biscuit edges well to keep filling inside. A little milk helps act as “glue.”
-
Use Parchment: Prevents sticking and makes cleanup easier.
-
Serve Warm: Best enjoyed the same day, slightly warm, when the caramel inside is gooey.
Variations
-
Cream Cheese Version: Add 1 oz softened cream cheese to the apple filling.
-
Streusel Topping: Before baking, brush bombs with melted butter and sprinkle with a mix of oats, flour, brown sugar, and cinnamon.
-
Air Fryer Option: Cook at 350°F for 8–10 minutes until golden.
-
Mini Bombs: Use canned biscuit dough from a 10-count tube and reduce baking time to 10–12 minutes.
