Prepare the marinade: In a small bowl, combine olive oil, garlic, rosemary, thyme, cumin, coriander, paprika, cinnamon, cayenne (if using), salt, and black pepper.

Marinate the lamb: Pat lamb chops dry with paper towels. Rub the spice mixture evenly over all sides of the chops. Place in a dish, cover, and refrigerate for at least 2 hours (or overnight for deeper flavor).

Preheat the grill: Heat your grill to medium-high (about 400°F/200°C). Clean and oil the grates.

Grill the chops: Place lamb chops on the hot grill. Cook for 4–5 minutes per side for medium-rare (internal temperature of 145°F/63°C), or adjust time to your preferred doneness.
